  1/3 cup 1/3 cup sweet white wine
  1. mix the wine and vinegar in a small pan and bring to a simmer.
  2. stir in the garlic powder, oregano and cilantro. stir it.
  3. simmer for several minutes, to allow the mixture to reduce. stir it some more.
  4. slowly stir in the butter and cheese to let them melt without slowing down the simmer too much. keep stirring.
  5. let it simmer for another 5-10 minutes, then add the cream. turn down the heat a little at this point, so you don't boil the cream. don't forget to stir.
  6. taste and add the salt slowly to taste, just so it takes the edge off of the sweetness. switch hands to stir if your arm gets tired..
  7. keep on low heat for another 5-10 minutes, and drizzle over your dish. it works great over veggies, and could probably mix well with fish or poultry.
