WEIGHT VOLUME QUANTITY INGREDIENT INSTRUCTIONS
  3 1/2 cup 3 1/2 cup wheat pastry flour
  1. preheat oven to 450°f. mince the garlic and thyme leaves. stir all ingredients together (except olive oil and cornmeal) in a large bowl. mix in 2 1/2 cups water, and knead until well-absorbed.
  2. wipe out the bowl clean, then grease with 1 tbsp of oil. shape the dough into a large ball, set in the oiled bowl, cover with a damp cloth, and let rise for about an hour. (magic, see?)
  3. punch down the risen dough, and divide it in half. roll each half into a ball, and let rest for ten more minutes in the bowl again.
  4. flatten each ball into a 10-inch circle. evenly sprinkle your pizza stone with the cornmeal, where your doughs will go. place both rounds on top. layer ingredients on top, then bake for 10-15 min.
