WEIGHT VOLUME QUANTITY INGREDIENT INSTRUCTIONS
  4 whole 4 whole golden delight potatoes (scrubbed, 180g each)
  1. pierce each potato with a fork 6 times. place them around the outer edge of microwave turntable and cook on high for 5 minutes. turn over and cook a further 5 minutes on high (potatoes will still be firm).
    light sour cream to serve
  1/4 cup 1/4 cup hoisin sauce
  1. preheat oven to 220c. combine hoisin, brown sugar, and garlic in a large bowl. add pork rashers and turn to coat. line a large baking tray with baking paper. arrange in a single layer, on a rack over the tray. place on top shelf and cook for 20 minutes.
  2. increase oven to 250c. place potatoes into oven on a shelf below the port and cook both for a further 10 minutes until pork is caramelised and potatoes are crisp.
  1 tbsp 1 tbsp brown sugar
  2 whole 2 whole garlic cloves (crushed)
1 1/5 kg   1 1/5 kg pork rashers (halved crossways)
  1 whole (large) 1 whole large firm mango (peeled)
  1. meanwhile, cut mango and cucumber into 1.5cm cubes and place into a bowl. add lime juice, olive oil, sugar, and mint. toss gently to combine. refrigerate until ready to serve. serve portk with salsa and jacket potato topped with light sour cream.
