WEIGHT VOLUME QUANTITY INGREDIENT SCALING INSTRUCTIONS
  2-1/4 cup 2-1/4 cup all-purpose flour (or cake flour)  
  1. preheat oven to 350 f. spray two 8-inch cake pans with non-stick cooking spray and set aside.
  2. in a large bowl, combine flour, baking powder, baking soda, salt, and sugar.
  3. add applesauce, coconut oil, bananas, and vanilla. with an electric mixer, beat until just combined.
  4. beat 2 more minutes on medium speed.
  5. add flax eggs and milk and beat 2 more minutes.
  6. pour batter into prepared pans and bake for 30-35 minutes or until surface springs back when gently pressed.
  7. cool in pans for 10 minutes. remove from pans and let cool completely on a baking rack.
  8. to make cream cheese frosting, beat cream cheese and vanilla in a medium bowl until creamy. gradually add in icing sugar until you reach your desired consistency. you may need to add some skim milk to thin out the frosting.
  9. place bottom cake layer on your serving dish and spread a thin layer of frosting on top. top with sliced banana. place the second layer on top of the banana/frosting and frost the top of the cake.
