WEIGHT VOLUME QUANTITY INGREDIENT SCALING INSTRUCTIONS
  3 whole 3 whole eggs  
  1. preheat oven to 350°f and line a muffin pan with cupcake liners. set aside.
  2. in a mixing bowl, mash bananas until creamy, add in honey, eggs and coconut oil and mix through.
  1/3 cup 1/3 cup coconut oil (melted)  
  2 whole 2 whole ripe bananas (mashed)  
  1/3 cup 1/3 cup honey  
  1/2 whole 1/2 whole coconut flour  
  1. add coconut flour, and mix well. i do this with a wire whisk. allow batter to sit for 5 minutes to allow the coconut flour time to absorb the liquids.
  1/2 cup 1/2 cup walnuts (chopped)  
  1. add baking soda and walnuts and combine. 5. fill cupcake liners all the way.
  2. bake for 22-26 minutes or until lightly browned on the top and a toothpick inserted comes out clean.
  3. remove muffins from the baking pan and let cool in a wire rack.
