WEIGHT VOLUME QUANTITY INGREDIENT SCALING INSTRUCTIONS
  2 cup 2 cup plain flour  
  1. preheat the oven to 180°c (350°f).
  2. sift the flour and baking powder into a bowl. add the sugar.
  3. place the sour cream, eggs, lemon zest and oil in a bowl and whisk well until smooth.
  4. stir this mixture into the flour mixture until just combined. be careful not to overwork the mixture or it will not rise as successfully.
  5. add the blueberries and stir gently.
  6. spoon the mixture into a greased muffin tin. bake for 12-20 minutes depending on the size of muffins.
