WEIGHT VOLUME QUANTITY INGREDIENT INSTRUCTIONS
  1 tbsp 1 tbsp yeast
  1. dissolve yeast and sugar in warm water in a mixing bowl
  2. add salt, honey, butter and buttermilk, begin mixing by hand or by machine(with dough hook)
  3. add seeds, corn meal and rolled oats, then whole wheat and oat flour.
  4. slowly add bread flour until the dough becomes elastic.
  5. remove from mixer, cover and let rise until it has doubled in size, likely 30-45 minutes
  6. punch down, divide into 2 or 3 equal parts and let rise again, for approximately 30 min, or until it has doubled in size again.
  7. preheat oven at 425f
  8. brush loafs with water, then sprinkle with some extra seeds.
  9. bake for about 30-45 min, until browned. it is done when tapping yields a hollow sound.

  1/2 cup 1/2 cup rolled oats
  1/2 cup 1/2 cup oat flour
  1 1/2 cup 1 1/2 cup wheat flour
  3 1/2 cup 3 1/2 cup bread flour
