  1/3 cup 1/3 cup golden brown sugar (packed)  
  1. do ahead: can be made the day before or 1 hour ahead. combine first 4 ingredients in a heavy large skillet. bring to boil, whisking. boil 1 minute.
  2. add walnuts; stir. toss until syrup forms glaze on nuts, about 3 minutes.
  3. transfer nuts to sheet of foil sprayed with oil and quickly separate nuts with fork. cool.
  1/4 cup 1/4 cup water  
  2 tbsp 2 tbsp butter  
    pinch of salt  
  1 1/2 cup 1 1/2 cup walnut halves  
  5 tbsp 5 tbsp extra-virgin olive oil  
  1. whisk oil and vinegar in small bowl. season dressing with salt and pepper.
  2. place arugula in large bowl. drop in nuts, croutons, and goat cheese. toss with enough dressing to coat lightly. enjoy!

5 oz 1 whole 5 oz (1 whole) baby arugula  
5 oz 1 whole 5 oz (1 whole) soft goat cheese (broken into 1/2-inch pieces, chilled)
