WEIGHT VOLUME QUANTITY INGREDIENT SCALING INSTRUCTIONS
  3 pint 3 pint coarsely chopped apples  
  1. make chunky apple sauce: simmer apples with cinnamon and nutmeg and half a cup of water for 20 minutes on low heat.
  2. re-activate the yeast, warm 1/2 cup of half and half to hand warm temperature, stir yeast in and let stand until bubbly (approx 5 minutes)
  3. heat oven to 350* and grease and flour a 9 inch loaf pan.
  4. in a mix bowl, whisk eggs and sugar with butter.
  5. add apple sauce, then spoon-by-spoon add and mix in flour.
  6. add rolled oats and raisins, mix until thoroughly combined.
  7. pour into pan.
  8. bake for 55 minutes, or until a pick comes out clean.
  9. cool on wire rack.
